This beer has been brewed since 2020 in the former stables of the Vaucelles Abbey, which was founded in 1131 by the monk Bernard de Clairvaux and which housed a brewery. Completely renovated by Benjamin Dalmas and Alexis Dujardin, the stables now house a new brewing room. Simon, with 5 years of experience in fine French craft breweries such as Rouget de l’Isle and Page 24, develops recipes inspired by the authenticity of the place. To date, they offer 3 beers, made from Vaucelles spring water and French barley, with hops from the North.
